Chef Paolo originally moved to Seoul to work for The Westin Chosun as an Executive Sous Chef for one year before moving to Busan to spend two years working for the Paradise Hotel as a Sous Chef. As recognition for his contributions to the quality of hotel’s dining experience, the latter restaurant has been renamed in the culinary artist’s family name, much to his delight.
